Technical Specification for the WaterMark Certification Scheme

This Technical Specification sets out minimum product requirements for the connection of commercial catering appliances employed for the preparation, cooking, and holding of food to the water service and sanitary plumbing piping.

This Technical Specification does not cover sanitation aspects beyond the water system within the appliances only, i.e., from the mains water supply connection(s) to all water use type outlets within the appliance.

The development of this new Technical Specification has been deemed necessary as many of these types of appliances have been certified under existing product specifications such as WMTS 101,104, or 105. However, individual product type listings have been removed from these product specifications as risk assessments have not been carried out for many of these individual products.

In addition, commercial catering appliances consist of many different varieties of model types, as well as many combinations of multi-module and multi-function designs. The model types are continuously evolving, and new forms are being developed, described, and named in various ways. A product specification for each model type, or even a similar ‘family,’ has been assessed as impractical, and unnecessarily complicated to develop and maintain.

The new Technical Specification has been developed as a single common product specification based on the categorised or separate assessment of the critical characteristics and different water sub-systems within the appliances, similar to those incorporated within EN 61770/A11 Electric appliances connected to the water mains - Avoidance of backsiphonage and failure of hose-sets.

Adopting this method allows for a systematic break-down of the water system within the appliance into individual water use sub-systems classifying the risk level and suitably adopting any prescribed solution for the risk level.

This methodology is set out in Appendix B of the Technical Specification, which nominates all the different water use types classifying these into 5 different categories. An appropriate minimum safety protection level has been specified to each of these 5 water use categories based on AS/NZS 2845.1, AS 2845.2, and EN 1717 to meet the requirements of AS/NZS 3500.1 Water Services.
